Recipe for Today: Classic Cheesecake

Classic Cheesecake

  • 2 lb. cream cheese, room temperature
  • 3/4 cup granulated sugar
  • 2 tbsp. cornstarch
  • 3 large eggs
  • 1/2 pint heavy cream
  • 2 tsp. vanilla extract
  • Lemon rind 1 wafer crust
Mix all ingredients until smooth and fit the wafer crust into a 9-inch spring form pan. Pour in ingredients, and bake 1 hour or till slightly browned at edges at 350 degrees. Don't over-bake -- it tends to dry out the cake.
