Recipe of the Day: Simply Perfect Brownies from Scratch

The Fudgiest, Gooiest Brownies, with the Deepest, Darkest, Most Intense Chocolate Flavor EVER! From Scratch, Pantry Staples, Just One Bowl, No Mixer Required.


  • 1 1/4 cups (2 1/2 sticks) unsalted butter
  • 2 1/2 cups granulated sugar
  • 1 3/4 cups unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 4 eggs (cold)
  • 1 cup all purpose flour


  1. Preheat the oven to 325 degrees F, and bring a wide skillet 3/4 full of water to a low simmer.
  2. Lightly grease an 8x8-inch, or 9x13-inch baking pan, and line with parchment.
  3. Place the first 4 ingredients in a large mixing bowl, and set the bowl in the simmering water.
  4. Allow the butter to melt and the mixture to become fairly hot, stirring every so often.
  5. Remove the bowl from the heat and allow the mixture to cool slightly.
  6. Stir in the vanilla.
  7. Add the eggs, one at a time, beating vigorously after each addition. The batter should begin to look smooth and glossy, and slightly pull away from the sides of the bowl.
  8. Stir in the flour, and pour the mixture into the prepared pan.
  9. Bake for 45 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  10. Cool completely in the pan, then transfer to a cutting board. Cut into bars.
