*Updated* Recipe of Day: Buffalo Popcorn Chicken with Homemade French Fries

Hey guys! I tried this new creative recipe out and wanted to share it with all of you!  This will make a great little snack for lunch while watching a football game on Thanksgiving Day! It's a great little meal to have while waiting for the main event! Leave a comment below if you've tried something similar.

Ingredients:

  • 1 Cup of Giant's brand Old fashioned pancake/waffle mix
  • 2 Teaspoons of Paprika
  • 2 Teaspoons of Cumin
  • 2 Teaspoons of Giant's Brand Garlic & Herb seasoning
  • 4 Boneless Chicken Breast
  • 2 Tablespoons of Frank's Red Hot Sauce
  • 1 Tablespoon of Butter
  • 1/4 Cup Canola Oil
  • 6 Russet Potatoes
  • 1 Teaspoon of Salt

Directions:

French Fries:
  1. Peel and cut potatoes.
  2. Place them in cold water with a tablespoon of salt for about 10 to 15 minutes. This will give them a crisp shell. Then fry.
Chicken:
  1. Wash and dry the chicken breast.
  2. Cut the chicken breast in half and then in thirds. You'll want little cubes.
  3. Prepare 1 Cup of Pancake batter.
  4. Mix in Paprika, Cumin, and Garlic & Herb seasoning.
  5. Throw the chicken cubes in the batter and mix around.
  6. In a shallow pan, heat oil on medium heat.
  7. Place chicken in pan and cook until golden brown. Turn over and do the same so both sides are cooked evenly.
  8. Remove from heat and set aside.
  9. In a separate skillet heat butter and hot sauce and reduce.
  10. Add chicken back in and let sit for 30 seconds on both sides.
  11. Remove from heat and serve with fries!
