Recipe of the Day: Festive Candy Cane Kiss Centered Brownie Bites

Tis the Season to try Picky Palate's recipe for Festive Candy Cane Kiss Centered Brownie Bites! The scrumptious treats are made using HERSHEY'S KISSES Candy Cane Flavored Candies! To see step by step photos, click here!

Ingredients:

• 1 brownie mix 9×13 inch size
• 18 Candy Cane Hershey Kisses
• 1/2 Cup chocolate chips
• 2 Tablespoons heavy cream
• 3 original candy canes, crushed

Directions:

1.  Preheat oven to 350 degrees F.  Prepare brownie mix according to package directions and scoop into a mini cheesecake pan or mini muffin tin pan that has been generously sprayed with cooking spray, about 3/4 way full.  Press kisses into center of brownie batter, do not push all the way to bottom, some of the tip should stick out the top.  Bake for 20-23 minutes or until brownies are cooked through.  Let cool completely.

2.  Melt chocolate chips in microwave 30 second intervals until smooth and melted.  Stir in cream until silky smooth.  You can place back in microwave for 10 seconds to smooth more if needed.  Dip tops of brownies into melted chocolate, then sprinkle with crushed candy canes.  Serve with a tall glass of milk.  Enjoy!!

Recipe of the Day: Italian Tortano

 

If you're familiar with stromboli, then you know this Italian pastry very well. What you likely didn't know was how simple it is to prepare your own. One bite and you'll want to stuff yourself with this scrumptious pizza place staple. 

Ingredients:

• 5 loaves frozen bread dough, thawed 
• 1 lb. hard salami 
• 1 lb. ham 
• 1 lb. pepperoni 
• 1 lb. provolone cheese, sliced 
• 1 lb. mozzarella cheese, sliced 
• 1 lb. Muenster cheese, sliced 
• Hot peppers 
• 1 egg white, lightly beaten 

Methods/steps:

Divide each loaf of bread into 4 pieces. Roll out to about 1/8-inch thick. Alternate layers of meat and cheese and add peppers. Wrap bread dough around meat and cheese. Tuck ends under well (to prevent leaking of juices) and place on greased cookie sheets. Brush Tortano with egg white. Place in 350-degree oven for 20 minutes or until golden brown.

Recipe of the Day: Pernil (Puerto Rican Pork Shoulder)

For those that don't know, I am Puerto Rican.  Aside from Thanksgiving Turkey, we also make Pernil and we eat Pasteles. I guarantee you that you will love it! Here is the recipe for this awesome holiday dish. 

Ingredients:

• 8 lb picnic pork shoulder
• 12 minced garlic cloves
• 1 1/2 teaspoons dried oregano
• 1 pack of Sazon
• 3 tablespoons canola oil
• 3 tablespoons white vinegar 
• 3 tablespoons of Adobo
• 8 teaspoons salt (or 1 teaspoon of salt per pound of meat if you are using a smaller cut of meat)
• Sofrito (homemade not store-bought)

Directions:

1. Wash the pork shoulder.
2. With a sharp knife, cut the skin off and peel back
3. Then make 1 inch deep slits into the pork.
4. With mortar and pestle crush garlic, oregano, adobo, sazon together. Add canola oil, vinegar Sofrito, and salt. Mix well. If you need more then repeat these steps
5. Spoon some of the mixture inside the small cuts around the pork, and spread remaining mixture all over the pork.
6. Place pork in an aluminum turkey pan (skin side up); cover with aluminum foil tightly. Refrigerate at least 8 hours. (I have marinated this for as long as 4 days.).
7. Bake in a pre-heated 325 degrees Fahrenheit oven for about 5 to 6 hours.
8. Remove aluminum foil and bake at 375 degrees Fahrenheit for another hour or until skin is crisp. Closely watch this so you don't burn the skin (chicharrone).
9. Pork should be well-done and tender.

Recipe of the Day: Santa Claus Strawberries

Ingredients:

• 1 lb large strawberries
• 1 (8 ounce) package cream cheese, softened
• 3-4 Tablespoons powdered sugar (or sugar substitute - to taste)
• 1 teaspoon vanilla extract

Directions:

1. Rinse strawberries and cut around the top of the strawberry. Remove the top, (enough for a hat). Clean out the whole strawberry with a paring knife, if necessary (some of them are hollow already. Prep all of the strawberries and set aside.

2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.

3. Once strawberries are filled, top with the 'hats.' Decorate according to photo.

4. If not serving immediately, refrigerate until serving.
